1/2cupunbleached all-purpose flour
1/4cuplight or dark brown sugarpacked
1/4cuprolled oatsold-fashioned or quick-cooking
1/8tspsalt
4tbspbutterat firm room temperature
Instructions
Preheat Your Oven - Set your oven to 400°F and line a 12-cup muffin tin with paper muffin liners or lightly coat with cooking spray.
Mix the Dry Ingredients - In a large bowl or the bowl of a stand mixer, combine the flour, ground oats, flaxseed, coconut sugar, baking powder, baking soda, cinnamon, and salt. Stir everything together with a whisk to ensure it’s evenly distributed.
Prepare the Wet Ingredients - In a smaller mixing bowl, whisk together the milk, melted coconut oil, egg, honey, and grated apples until well blended.
Combine Wet and Dry - Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring gently until just combined. Be careful not to overmix—a few lumps are perfectly fine.
Fill the Muffin Cups - Spoon the muffin batter evenly into the prepared muffin pan, filling each about three-quarters full.
Make the Streusel Topping - In a separate bowl, whisk together the flour, brown sugar, oats, and salt. Using a fork or pastry cutter, work the butter into the mixture until it forms coarse crumbs. Sprinkle the streusel evenly over the top of each muffin.
