Ingredients
1cupof ricelong-grain, rinsed well
1 ¼cupschicken brothor vegetable broth
1tbspolive oil
½tspsalt
2tbspfresh lime juice
1tbsplime zest
½cupchopped fresh cilantro
Instructions
Rinse your rice thoroughly under cool water until the water runs clear.
Place rice, broth, oil, and salt in the Instant Pot. Stir to combine.
Seal the lid and set to cook on High Pressure for 4 minutes.
Allow a 10-minute natural release, then do a quick release for any remaining pressure.
Open the lid, fluff the cooked rice with a fork, and let it cool slightly to room temperature.
Stir in the lime juice, lime zest, and fresh cilantro.
