Ingredients
12oz canSan Marzano tomatoes with basil
15oz cantomato sauce
1 smalloniondiced
2clovesgarlicminced or grated
2 1/2cupslow sodium chicken broth, vegetable broth, or bone broth
1tbspsalt
1/2tspblack pepper
1cuphalf and half, heavy cream, or whole milk
1tbscoconut sugar, or white sugar
A FewLeavesFresh BasilFor garnish - This is optional
Instructions
In the Instant Pot, add both cans of tomatoes, diced onion, garlic, chicken broth, salt and pepper.
Put the lid on and set it to sealing.
Set the Instant Pot to High Pressure for 10 minutes, and let it cook.
After the soup has cooked you can use the quick release by releasing the pressure valve, or release naturally and stay on the keep warm setting.
Remove the lid and add the sugar and the half and half.
Use an immersion blender, food processor, or a regular blender to puree the soup to make it nice and smooth.
Enjoy your soup!
Notes
We like to serve this with crackers, grilled cheese sandwiches, or fresh bread.You can garnish the top of the soup with fresh basil if you have some.If you like a creamier soup add more half and half or cream.
