What type of canned tomatoes should I use for this tomato soup recipe?
For this recipe, I use a 12 oz can of San Marzano Tomatoes with Basil. This is one of my favorite pantry ingredients. It is incomparable to other canned tomatoes and has the best flavor. This ingredient really makes this dish so much better.
The fresh, sweet flavor is so much better than other canned tomatoes. If I have them on hand I can quickly whip up a batch of this soup or my family’s favorite marinara sauce anytime!
Most of my recipes are full of fresh ingredients, but this one falls under what I call pantry cooking, using ingredients you can easily keep on hand and whip up at a moment’s notice. The only fresh ingredients you need to have are the fresh onion and fresh garlic. Those are ingredients I always have on hand and they last a long time.
Let’s Talk About The Instant Pot
Do you have an Instant Pot? If you’re new to pressure cooking, don’t be afraid. I got mine a few years ago and I really love it. We have been cooking at home a lot lately (as I’m sure you can relate, happy 2020!) and we need some simple recipes that make everyone happy, without Mama spending all of her time in the kitchen. Thank you Instant Pot!!
With the instant pot pressure cook settings, you can have this soup ready for your family in under 15 minutes. That’s a fast meal!
Tomato soup is a staple around here and this is our favorite homemade recipe. Comforting and creamy, it’s like a comforting hug in a bowl. We serve it with grilled cheese, crackers, homemade bread, a salad, or sandwiches to complete the meal. It’s almost as easy as opening up and heating a can of soup and it tastes so much better!
How to Make Creamy Tomato Basil Bisque in the Instant Pot
- In the Instant Pot, add both cans of tomatoes, diced onion, garlic, chicken broth, salt and pepper.
- Put the lid on and set it to sealing.
- Set the Instant Pot to High Pressure for 10 minutes, and let it cook.
- While the soup cooks, this would be a great time to make up your grilled cheese, mix up a big salad, or toast some delicious crusty bread to complete the meal
- After the soup has cooked you can use the quick release by releasing the pressure valve, or release naturally and stay on the keep warm setting.
- Remove the lid and add the sugar and the half and half.
- Use an immersion blender, food processor, or a regular blender to puree the soup to make it nice and smooth. Be careful when blending hot liquids, they could splash and burn you.
- Enjoy a delicious bowl of tomato soup!
How to store leftover Tomato Basil Soup
Store in an airtight container for up to a week. You can reheat in the microwave or on the stovetop on low next time you’re ready to eat. The best part is, as it sits it gets even more flavorful!
