7. Freezer Burrito Recipe – Cheesy bean and rice burrito recipe

Make-Your-Own Freezer Burritos!
If you’re on a budget, this is the freezer meal for you! This is one of my favorite ways to use up leftover rice, beans, salsa, and even left-over taco meat—it makes feeding my hungry family so much easier. It can be a quick snack, lunch, or dinner.

Just spoon your fillings into a tortilla, roll it up snugly, and place the burritos in a large zip-top freezer bag. Freeze for up to 3 months.

To reheat, you’ve got options:

  • Microwave straight from the freezer for 1–2 minutes until hot.
  • Or for a crispier finish (our favorite!), warm a little oil in a cast iron skillet and grill the frozen burrito over low heat until golden brown on the outside and hot in the center. You can also microwave the burrito for 1 minute first to get the inside warm, then finish it in the skillet for that perfect toasted texture.

Another great way to do this is to spray the burrito with a little oil and crisp it in the air-fryer at 400 degrees until crispy and warmed through.

Serving Suggestion: Serve with your favorite fresh burrito fillings with sour cream, avocado, jalapeño, or salsa. Serve with 3-Ingredient Mexican Rice

8. Pesto tortellini bake freezer meal

An easy and flavorful pasta bake with tortellini, spinach, sundried tomatoes, and pesto.

9. Chicken Soup Freezer Meal

How to Freeze Chicken Soup with Pastina

I go over this in more detail in the FAQ section of my Chicken Pastina Soup recipe, but here’s the quick version: To freeze chicken soup, make the full recipe—just skip the pasta. Once the soup has cooled, transfer it to a freezer-safe container, label it, and freeze for up to 3 months.

When you’re ready to enjoy it, thaw the soup in the fridge, reheat it gently on the stove over low heat, and cook the pasta separately according to the package directions. Then just combine the two, give it a stir, and serve. This method keeps the pasta from getting mushy and helps the soup taste freshly made!

Cook 1 lb. penne pasta a bit less than al dente, and mix it with cooked, shredded chicken, slightly steamed broccoli, and jarred alfredo sauce…we love Raos. Top with shredded mozzarella cheese and bake at 350 degrees F until the cheese starts to melt and turns lightly brown.

Serving suggestions: This is a great all-in-one recipe, but you could serve it with a side salad, garlic bread, or sliced tomatoes drizzled with olive oil, balsamic glaze, and sprinkled with salt to round out the meal.

15. Freezer Quiche Recipe

My favorite quiche recipe is my Savory Quiche Florentine with Cheddar and Green Onion. This recipe freezes beautifully.

I like to prep this quiche as a freezer meal—it’s such an easy way to have a homemade breakfast or dinner ready to go. To do this, assemble the quiche as directed in the recipe using a disposable pie plate. Place the unbaked quiche flat in your freezer. Once it’s fully frozen, wrap it tightly in a layer of plastic wrap, then a layer of aluminum foil. Label it with the date and contents, and store it in the freezer for up to 4 months.

To bake from frozen: Remove the plastic wrap and foil, and bake the quiche directly from frozen—no need to thaw!

16. Lemon Basil Chicken Freezer Recipe

Lemon Basil Chicken is perfect to cook on the grill or in a cast-iron skillet.

For my Lemon Basil Chicken, I like to prep the marinade right in a large freezer bag labeled with the date and recipe name. Add the chicken breasts to the bag, seal it carefully, and press out as much air as possible to prevent freezer burn. Store flat in the freezer for up to 6 months.

When you’re ready to cook, simply transfer the bag from the freezer to the fridge and let it thaw overnight. It’s a super-easy way to get a flavorful meal on the table with almost no prep at dinnertime.

To Reheat (from frozen)

  • Remove any foil or parchment.

    • Retain moisture (so the tortilla doesn’t dry out or get tough)
    • Ensure even reheating
    • Prevent cracking or hard edges
  • Microwave on a microwave-safe plate for 1–2 minutes, flip, then heat another 1–2 minutes until heated through.

These sandwiches freeze beautifully, making them perfect for quick, no-fuss meals. To prep, assemble the sandwiches ahead of time, then wrap each one individually in foil and place them all in a large zip-top freezer bag. Store in the freezer for easy grab-and-go options.

To reheat:
– For a crispier sandwich, pop the foil-wrapped sandwich into a 350°F oven or toaster oven and heat until warmed through.
