For the blueberry syrup
- In a small saucepan, combine the blueberries, juice of two lemons, and granulated sugar.
- Cook the mixture over medium heat, stirring occasionally until the blueberries begin to break down and release their juices.
- Once the blueberries are soft and the sugar has dissolved, remove the syrup from the heat and let it cool for a few minutes.
- Using a fine-mesh strainer, strain the syrup into a small bowl, pressing down on the blueberries to extract all the flavorful liquid. Discard the solids.
To assemble the spritzer
- Juice the remaining lemons to obtain fresh lemon juice. You should have around 1 cup of lemon juice.
- Fill a glass with ice cubes.
- Pour in the blueberry syrup and fresh lemon juice.
- Stir gently to combine the flavors.
- Slowly pour the sparkling water into the pitcher or jug, giving it a gentle stir. Adjust the sweetness and tartness by adding more lemon juice or sugar, according to your taste preference.
- Garnish with fresh blueberries for an added touch of elegance and enjoy!
