School is out and summer is here!  Our kids are attending sports camp this week and when they come home they are tired, hungry, and thirsty.  This refreshing treat is something we can all enjoy together on a hot summer evening.  It’s kind of like blueberry lemonade, but feels so much fancier!

When it comes to delightful and delicious mocktail recipes, a Blueberry Lemonade Spritzer is a true winner. Bursting with vibrant flavors, this non-alcoholic cocktail is a delightful combination of tangy lemons, juicy blueberries, and the effervescence of sparkling water. It’s a perfect drink to enjoy during the scorching summer days, family gatherings, or any time you crave a delicious, thirst-quenching treat. 

Ingredients: 

To prepare a Lemon Blueberry Spritzer, you’ll need the following ingredients:
  • 1/4 cup fresh blueberries – frozen works too.
  • 1 Tablespoon granulated sugar –  You can use more if you like a really sweet drink
  • 1 Tbs of water
  • 1 lemon
  • About 1 cup of sparkling water or club soda
  • Ice cubes
  • Lemon Slice (for garnish)

Instructions:

How to make a Lemon Blueberry Spritzer:
  1. Prepare the Blueberry Syrup:
    • In a small bowl, combine the blueberries, water, and granulated sugar.
    • Cook the mixture for 1 minute, covered in the microwave.   Remove and stir and mash until the blueberries begin to break down and release their juices and to dissolve the sugar.
    • Using a fine-mesh strainer, strain the syrup into a small bowl, pressing down on the blueberries to extract all the flavorful liquid. Discard the solids.
  2. Squeeze Fresh Lemon Juice:
    • Juice the lemon to obtain fresh lemon juice. You should have a few tablespoons of lemon juice. (this is not an exact recipe, however much juice you have will be okay!)
  3. Assemble the Spritzer:
    • Fill a large glass with ice cubes.
    • Pour in the blueberry syrup and fresh lemon juice.
    • Stir gently to combine the flavors.
  4. Add the Sparkling Water:
    • Slowly pour the sparkling water into the glass, giving it a gentle stir.
    • Adjust the sweetness and tartness by adding more lemon juice or sugar, according to your taste preference.
  5. Serve and Enjoy:
    • Garnish with lemon slices, lemon wedges, or fresh mint leaves for an extra touch of elegance.

Notes: If you do want to make this an alcoholic cocktail, add a splash of vodka to make a lemon blueberry vodka spritzer.

  • 1/4 cup fresh blueberries

  • 1 medium or large lemon
  • 1 cup sparkling water
  • Ice cubes
  • A few blueberries to garnish

Instructions

For the blueberry syrup

  • In a small saucepan, combine the blueberries, juice of two lemons, and granulated sugar.
  • Cook the mixture over medium heat, stirring occasionally until the blueberries begin to break down and release their juices.
  • Once the blueberries are soft and the sugar has dissolved, remove the syrup from the heat and let it cool for a few minutes.
  • Using a fine-mesh strainer, strain the syrup into a small bowl, pressing down on the blueberries to extract all the flavorful liquid. Discard the solids.

To assemble the spritzer

  • Juice the remaining lemons to obtain fresh lemon juice. You should have around 1 cup of lemon juice.
  • Fill a glass with ice cubes.
  • Pour in the blueberry syrup and fresh lemon juice.
  • Stir gently to combine the flavors.
  • Slowly pour the sparkling water into the pitcher or jug, giving it a gentle stir. Adjust the sweetness and tartness by adding more lemon juice or sugar, according to your taste preference.
  • Garnish with fresh blueberries for an added touch of elegance and enjoy!
