Bourbon Peach Sugar Cookie Cobbler

Ripe, fresh peaches tossed with bourbon syrup and topped with a cookie-like cobbler crust, then baked until golden brown.  Homemade peach cobbler with a scoop of vanilla ice cream is a delicious way to enjoy summer’s bounty.

What do you prefer a cobbler or a crisp?  A shortcake or a pie?  These are the big questions I’m wondering about this summer.  Ahhhhh vacation, it’s a good thing.  My family always made crisps and I was never a huge fan of the crunchy oatmeal topping, but a pie or cobbler…ohhh yes that is a favorite for me.

A cobbler is a baked fruit dessert in which a fruit filling is covered by flaky biscuits, then baked all together. The biscuits are usually scattered on top of the fruit filling, giving the overall visual of a cobbled road. I took this idea and changed it a little bit, making a crust that is somewhere between a biscuit topping and a sugar cookie, and let me tell you, it’s sooooo delicious!  Add some summer peaches and a little bourbon and you have the best peach cobbler that’s an easy dessert for any evening.

Ingredients you will need for our Bourbon Peach Cobbler Recipe

for the crust:

flour
white sugar
1 large egg
pinch of salt
butter
vanilla extract

for the filling:

3-4 Peaches, peeled and sliced
1/4 cup bourbon
sugar
butter
flour
lemon juice 

Preheat your oven to 375 degrees F

How to make peach cobbler filling:

In a small saucepan over medium-high heat melt the butter.  Once the butter is melted and a little bubbly add in the flour and whisk together for one minute.  Lower the heat to medium-low and add the bourbon (if you have a gas stove, be careful of the flame when cooking with alcohol!) and the sugar and continue to whisk until the mixture is well combined and starts to thicken.  Remove from the heat, add the lemon juice, and set aside.

Peel and slice the peaches and lay them in an even layer in a 9×13 baking dish that has been buttered or sprayed with a little cooking oil.  Then pour the bourbon mixture over the peaches.

How to make peach cobbler crust:

In a large bowl, mix together the flour, salt, and one cup sugar.  Crack in the egg and stir with a fork until the mixture becomes crumbly.  Melt the butter and add in the vanilla.  Crumble the flour mixture over the peach mixture in the pan leaving little gaps with the peaches peaking out.  Pour the butter and vanilla mixture over the top of the crust to moisten it.  You can sprinkle the crust with a little sugar or cinnamon sugar if you’d like.

Bake and enjoy!

You could also make this recipe in a cast-iron skillet for a more rustic look.  Use the skillet to make the bourbon sauce, lay the peaches over it in an even layer and then top with the crust and butter and bake.

How to reheat a peach cobbler

If you do happen to have leftover cobbler, you can reheat it in the microwave for about 30 seconds (or a little more if you need it)

How to make a peach cobbler with frozen peaches

With frozen peaches, you can enjoy this even when it is not peach season.  Just thaw the peaches, drain any liquid (or use it in a smoothie!) and continue with the recipe as written.  I wouldn’t use canned peaches for this recipe though, with the bourbon sauce it will have too much liquid.

Notes

You could also make this recipe in a cast-iron skillet for a more rustic look.  Use the skillet to make the bourbon sauce, lay the peaches over it in an even layer and then top with the crust and butter and bake.
If your peaches aren’t super juicy, add a little water to the bourbon mixture.
