I can’t get enough of these burgers. Perfect for summer or fall, it’s an easy recipe that feels fancy. Plus it’s just so delicious! The melty brie in the center of the turkey patty is so savory and works so well with the fig preserves, grilled tart granny smith, and the savory sauteed red onion. Once you try it you won’t be able to get it out of your mind!
Serve with your favorite vegetable side dish. We like to serve ours with roasted sweet potatoes, sauteed Brussels sprouts, potato wedges, or whatever fresh cut veggies we have in the fridge. We sometimes love to serve this burger on a pretzel bun, but really any type of burger buns would be great with this recipe.
Ingredients needed to make brie-stuffed turkey burgers:
- Ground Turkey
- Brie Cheese
- Salt
- Black Pepper, ground
- Brioche or Pretzel Buns
- Butter, melted
- Fig preserves – If you don’t have fig preserves cranberry sauce (the canned kind!) would probably be a good alternative here.
- Granny Smith Apple
- red onion
- Worcestershire sauce
How do you stuff cheese into a burger patty?
- Place plastic wrap onto a clean work surface.
- Mound the ground turkey onto the center of the plastic wrap.
- Place another piece of plastic wrap over the mound
- Use a flat-bottomed pan or pot to press the meat out into a patty approximately 8” in diameter.
- Remove the top piece of plastic wrap.
- Place a small slice or two of brie onto the center of the patty. You can cut it in half if needed. The brie should just fill the center of the patty with extra meat on the sides.
- Carefully fold the excess meat over the cheese covering it completely.
- Use the plastic wrap to help fold the meat over the cheese and press to form a patty.
- Repeat the process as needed (if making more than 1) and wrap the patties individually in plastic to store.
- Let the patties rest under refrigeration for at least 15-20 minutes prior to cooking and up to 24 hours.

Get the onions sauteeing:
- Add butter to a cast iron skillet, or any large pan over medium-low heat. Once the butter is melted add the thinly sliced onions, Worcestershire sauce, and a little salt and pepper.
- Cook stirring every few minutes until the onions are soft and cooked down.
Assembling The Burger:
- Place the prepped stuffed brie turkey burger patties onto the grill that’s preheated to medium-high heat and season both sides of the burger with salt and pepper. Cook for about 4 minutes.
- Brush the melted butter onto the cut sides of the bun and place (cut side down) onto a griddle or non-stick pan to toast approx. 30-60 seconds.
- Remove the bun and set aside until needed.
- Flip the burger over and cook for about 4-5 minutes.
- If needed, season the burger with a little more salt and pepper just before removing it from the grill.
- Brush the slice of Granny Smith apple with a little oil and grill for 1-2 minutes per side. Remove from the grill.
- Spread the fig preserves on the top bun.
- Lay the grilled apple slice onto the bottom bun.
- Set the turkey patties on top of the apple slice.
- Mound the warm onions evenly onto the burger.
- Place the top bun onto the burger and enjoy!
- Be careful, the cheese in the center will be very hot! We like to cut the burger in half to see the melted brie cheese.
