The Chicken
For this recipe, I usually use a shortcut. Want to know what it is?
It’s canned chicken.
Does that freak you out? It shouldn’t because it’s so easy and it makes this recipe come together in minutes! This is pantry “cooking” at its best because you don’t have to heat anything up. You can, of course, use any shredded or cubed cooked chicken that you have. But if you have a can of chicken in your pantry you can pull lunch together in less than 10 minutes!
*Our favorite canned chicken is the Kirkland Brand from Costco.
The Veggies
This is Classic Chicken Salad so this recipe uses finely diced celery and grated onion. It’s delicious! But if you want to see a few awesome variations, go to the bottom of this post.
How to serve it?
Bread is an obvious choice! But we also like to serve it on homemade English muffins, wraps, rolls, and for a party, we will serve it on croissants. Yum!
OR Serve It On A Salad
I had never heard of this until I worked at a local coffee shop when I was in college. This was one of our most popular menu items. Customers loved it! I serve mine with my Dijon Vinaigrette Dressing (Recipe coming SOON!) It’s a perfect no-cook lunch or dinner in the summertime.
Chicken Salad Variations
Here are 4 other ways to make chicken salad sandwiches at home.
Spicy Chicken Salad Sandwich Recipe
Substitute finely diced red bell pepper for the celery, and add 2 tbsp chopped cilantro, and 1 Tbs Sriracha to the mayo. Diced avocado is good in this one too!
Chicken Salad with Grapes and Pecans
Another classic variation! To the original recipe add 1/2 cup of red grapes sliced in half and 1/8 cup of finely chopped pecans.
Curried Chicken Salad Sandwich Recipe
This is how my mom always made chicken salad.❤️To the original recipe add 1/2 tsp of curry powder (or more if you like it!) and 1/8 cup dried cranberries.
Nutty Chicken Salad Sandwich Recipe
This one packs an extra big crunch! To the original recipe add 1/8 cup of finely chopped pecans and 1/8 cup chopped or slivered almonds.
Chicken Salad
Ingredients
- 1 12.5 oz can Chicken Breast in water OR about 1 1/2 cups shredded chicken
- 3/4 cups Mayonaise
- 1/8 cup Celery very finely diced
- 1"x1" piece of Onion grated finely
- 1/2 teaspoon Salt
- Pepper to taste
Instructions
- Chop and grate all of the veggies and add-ins you are using and put them in a large bowl.
- If you're using canned chicken, drain it and add it to the bowl.
- Add mayonaise, salt, and pepper to the rest of the ingredients.
- Mix thouroughy
- You can serve immediately or it will keep in the fridge for about 3 -4 days.
