Mother’s Day Breakfast with Step-by-Step Instructions

A mother’s day brunch that’s sweet and savory and will make any mama feel special!

Mother’s day might look a bit different this year because we are going to all be at home. But no matter where we are, we are blessed if we can still eat some delicious food and be with our family, so here’s a fun mother’s day brunch idea for you!

This brunch includes a blueberry coffee cake, sweet and spicy bacon, and a creamy cold brew iced coffee to top it all off!

Overnight Blueberry Crunch Coffee Cake

Making breakfast the night before and then baking it in the morning is a game-changer. I now do this every holiday because we want a special meal, but who wants to be waiting around for 3 hours for breakfast to be ready. Not me, and certainly not my kids!

Overnight Blueberry Crunch Coffee Cake is one of those recipes. Mix it up the night before, and then in the morning all you have to do is bake, eat, and answer “Oh it was nothing!” when people ask how you made it so quickly.

Overnight Blueberry Crunch Coffee Cake

Not too sweet with a crunchy topping, this recipe combines traditional coffee cake with the flavor of blueberry muffins.

Ingredients

For The Cake

  • 2 cups all purpose flour +1 tablespoon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/2 cup butter softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

For the Strusel Crunch Topping

  • 1/2 cup sugar
  • 1/4 cup butter melted
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup pecans chopped

Instructions

  • Spray a 9×13 cake pan or casserole dish with baking spray.
  • In a large bowl mix together the 2 cups of flour, baking powder, baking soda, and salt.
  • With a mixer, cream together the butter and the sugar until they are combined and a light yellow color.
  • To the butter mixture, mix in 1 egg at a time until combined.
  • Then slowly alternate adding the milk and the dry ingredients to the egg and sugar mixture until all of the ingredients are combined.
  • Toss the remaining flour with the blueberries in a small bowl. Gently stir the blueberries into the batter with a spoon or a spatula.
  • Pour the cake batter into your prepared baking pan and spread it evenly.

For The Struesel Crunch topping

  • In a small separate bowl mix together all of the ingredients for the topping.
  • Crumble the topping over the top of the cake, it won't cover the entire top of the cake, but make sure it's evenly distributed.
  • Cover and put into your refrigerator overnight.

In the morning

  • Preheat the oven to 350 degrees and bake for 35-45 minutes, until a toothpick comes out clean when inserted into the center of the cake.
  • Let it cool for about 15 minutes before cutting into the cake.
  • Top each piece of cake with fresh blueberries.

Spicy and Sweet Bacon Twists

Need a little salt with your sweet? Mmmm yes! This bacon adds a little salt and spice to this breakfast. The twisted shape is not necessary of course, but it does take an everyday food and make it look a little extra special.

Sweet and Spicy Oven Baked Bacon Twists 

Spicy, sweet, and salty these bacon twists make your breakfast a little extra special.

Ingredients

  • 1 pound sliced bacon
  • 1 tablespoon dry mustard
  • 1/4 teaspoon cayenne pepper
  • 1 cup coconut sugar or brown sugar

Instructions

  • Preheat the oven to 350.
  • Line a baking sheet with aluminum foil or parchment paper. You can set a wire rack over the foil to ensure even cooking but it isn't neccessary. Use a baking sheet that has sides to catch the grease that will run off
  • In a small bowl, stir together the coconut sugar and mustard powder.
  • Press each slice of bacon into the sugar mixture and rub until coated.
  • Twist each strip a few times and place on the prepared baking rack.
  • Bake until bacon is browned and crisp enough to hold its shape, about 20-30 minutes.
  • Drain on paper towels and serve.

Notes

This bacon has a hint of spice.  If you like more spice, add more cayenne pepper!

Creamy Iced Cold Brew Coffee with Cinnamon

Ohhh I love coffee. I especially LOVE iced coffee. It makes me feel like summer is near and right now that makes me feel happy.

Making cold brew coffee concentrate is easy and the bonus is you make it the day before you are going to drink it (see a theme here?) That way it’s ready to go in the morning when you need your jolt. No waiting = happy mom.

Brewing The Cold-Brew Coffee

Cold-brew 1 cup water 1/4 cup coarse ground coffee. I usually make my cold brew in quart size mason jars and 3 cups of water plus 3/4 cup coarse ground coffee grounds fit perfectly in a jar.

Once your coffee and water are well mixed, let the mixture sit for 12-18 hours in your refrigerator to allow the coffee to infuse into the water. The ideal time to steep your cold brew is between 14 and 18 hours. This will give you the best flavor without the bitterness that could come from steeping too long.

Strain out the grounds using a fine mesh strainer.

Storing Cold Brew

Transfer your strained cold brew to a storage container, such as a large mason jar. Store it in the refrigerator for up to 1 week. After a week I find that the flavor starts to degrade and the iced coffee won’t taste as good.

Creamy Iced Cold Brew Coffee With Cinnamon

Creamy Iced Coffee, perfect for any summer morning.

Ingredients

  • 3 cups water
  • 3/4 cups coarse ground coffee

Add-Ins

  • 2 tablespoons half and half or cream
  • 1/4 teaspoon cinnamon
  • sweetener of your choice With cold drinks it's best to use a simple syrup or liquid stevia so it disolves properly.

Instructions

  • In a quart size mason jar, add 3 cups of water plus 3/4 cup coarse ground coffee grounds. Shake and store in the fridge fore 12-18 hours.
  • Strain out the grounds using a fine mesh strainer.
  • Transfer your strained cold brew to a storage container, such as a large mason jar. Store it in the refrigerator for up to 1 week.

To Make the Creamy Cold Brew With Cinnamon

  • Fill a glass with ice.
  • Pour in your cold brew concentrate until the glass is half full. Add sweetener now if you're using it. Mix well.
  • Fill the glass the rest of the way with water, leave enough room for the cream.
  • Add 2 tablespoons of cream or half and half.
  • Top with cinnamon and enjoy!

How To Make Your Mother’s Day Breakfast

The night before:

  1. Mix together the Overnight Blueberry Crunch Coffee Cake and store in the fridge.
  2. Prepare the cold brew coffee and store in the fridge overnight.

In the morning:

  1. Preheat the oven to 350 degrees.
  2. Strain your cold brew coffee concentrate.
  3. Put the Overnight Blueberry Crunch Coffee Cake in the oven.
  4. Make the bacon twists, and prepare them to go into the oven.
  5. When 20 minutes are left on the timer for the cake, put the bacon into the oven.
  6. Remove the cake and let it cool for about 15 minutes
  7. Remove the bacon when it’s done and let it cool for a couple of minutes.
  8. Pour the cold brew over ice, add half and half and sweeten to Mom’s liking.
  9. Plate the cake, bacon, and cold brew coffee and take to the Mom in your life!
