5 Easy Ideas Using English Muffins
They’re coming! The kids are going to be home for the summer in T-minus 6 days. They’re coming and they are going to want to eat ALL. THE. TIME. Those long days of sunshine, swimming, playing, and activities make my kids so hungry. Please let me know it’s not just me!
I like to take shortcuts and have quick foods on hand while still trying to keep it fairly healthy around here. Today I’m going to be talking about how I do that with a simple ingredient…an English muffin. Not that exciting on its own but here are some FUN ways to jazz it up a little bit and add some more nutrition AND all of these recipes are delicious. Here are 5 different English muffin recipe ideas for your hungry family to try.
1. English Muffin Mini Pizzas
Top sliced English muffins with your favorite pasta sauce, mozzarella, or parmesan cheese, and finish with your favorite pizza toppings. Place them on a cookie sheet and bake at 375 degrees until the cheese is melted and the English muffin is a little crispy on the bottom. For a little extra flavor, try brushing the outside of the English muffin with olive oil and add a sprinkle of Italian seasoning to the top of the pizza.


This is the fastest way to make pizza, my kids eat these for lunch once a week!
2. Chicken, and Cheddar Melts
A play on grilled cheese, these switch it up a little bit! Rotisserie chicken is the best, but any cooked shredded or cubed chicken will do.


Chicken Apple and Cheddar Melts
Ingredients
- 3 Tablespoons butter softened
- 4 English muffins
- 2 cups cooked chicken rotisserie chicken is great in this!
- 4 oz cream cheese
- 1/2 tsp ranch dressing powder
- 1/2 cup SHARP cheddar cheese shredded
Instructions
- Preheat the oven to 350 degrees. Grease a large baking sheet with non stick cooking spray or a silpat.
- Spread butter on the OUTSIDE of the English muffins. Arrange 4 halves on the baking sheet, butter sides down. Divide the cheddar evenly and sprinkle on each of the English muffin halves. Divide the chicken and do the same.
- Mix the cream cheese with the ranch powder. Then spread the cream cheese on the other 4 halves and place them on top of the sandwiches butter side up.
- Bake for 10 minutes, then flip the sandwiches and bake until crispy and golden, about 10 more minutes. Serve immediately
3. Homemade Breakfast Sandwich
This is a no-brainer! Any combination will do. A favorite at our house is sausage and cheese breakfast sandwiches on an English muffin. A few other favorites include ham and egg with cheddar cheese and tomato, bacon, egg, and Colby jack, or sausage and American cheese (no egg!)…Anything will do!
These also freeze really well. Premake the sandwiches, wrap them individually in foil, and place them in a ziplock bag. When you’re ready to eat one, pull it out and place the whole wrapped sandwich in an oven or toaster oven set to 350 degrees until warmed through. OR unwrap the tin foil, then wrap the sandwich in a damp paper towel and microwave for 1-2 minutes until warmed through.

We eat these for breakfast mostly, but we also have made them for a quick dinner with fruit on the side. It’s a hit every time!
4. Nut Butter Cinnamon Toasts
This is so simple and such a delicious treat! This isn’t even a recipe really…it’s so easy!

Preheat the oven to 350 degrees. Spread two halves of an English muffin with a little butter (optional) and then about a tablespoon of your favorite nut butter. We love peanut butter and almond butter on ours. On top of the nut butter sprinkle cinnamon sugar to taste. You can use any sugar you like! We prefer coconut sugar but have used white sugar, and even honey before. If using honey just beware that it will be a messier gooey treat!
Bake the muffins for about 10 minutes, then broil (watch them constantly it can take less than a minute!) until the top is bubbly and starting to caramelize. You can sprinkle on a little more cinnamon sugar after the initial 10 minutes of baking if you want to add a little more for your taste.
Allow the nut butter cinnamon toasts to sit for 5 minutes, then serve!
5. Sandwich Bread or Burger Bun
