How to make Mississippi Chicken in the Crock Pot
You will need:
- Boneless skinless chicken thighs-dark meat works better for this recipe.
- Butter- It makes everything better!
- Pepperoncini-in a jar with some of the juice
- Ranch Dressing Packet-It really makes the dish!
- One onion sliced- It gets soft but adds amazing flavor.
Add the sliced onion to the bottom of the crock pot and lay the chicken thighs over top. Sprinkle the pepperoncini and ranch dressing packet on top and finish with the butter. Cook on low for 8 hours and it’s done!
Serve your Mississippi Chicken over rice or mashed potatoes for a satisfying meal that will leave everyone feeling happy and full. Or we like to shred the chicken and eat it on burger buns or wrap it up in burritos or oven-baked taquitos.

Mississippi Chicken in the Slow Cooker
Ingredients
- 2 lbs boneless, skinless chicken thights
- 1 small onion diced
- 1 packet ranch seasoning
- 4 TBS unsalted butter
- 1/2 16oz jar pepperoncini with 1/8 cup of the juice
Instructions
- Put the diced onion on the bottom of the slow cooker.
- Add the chicken on top of the onion.
- Sprinkle the ranch seasoning mix and the pepperoncinis and the half cup of juices from the jar over the chicken.
- Place the butter on top. (It will melt into the sauce during cooking)
- Cover and cook on low for 7 hours or on high for 4 hours.
- Serve the chicken thighs whole or shred them all. We like to serve this a variety of ways. Serve over rice, on burger buns with other sandwich toppings, over mashed potatoes, or we even like to use it as a burrito or taquito filling.
