Simple and Delicious | Ground Turkey and Zucchini Stir Fry

Packed with protein, veggies, and clean ingredients, this recipe is a weeknight staple at our house and has been for years. It comes together in about 20 minutes and only uses one skillet. Simple, healthy, and delish!

To make this ground turkey and zucchini stir fry, you’ll need the following ingredients:

  • 1 pound ground turkey
  • 2 medium zucchinis, diced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons of coco aminos
  • 1 tablespoon sesame oil
  • Salt and pepper, to taste
  • Optional: chopped green onions, sriracha, french fried onions, peanuts, sesame seeds, or cilantro for garnish

In a large skillet or wok, heat the sesame oil over medium-high heat. Add the ground turkey and cook until browned, breaking it up into small pieces with a spatula as it cooks.

Once the turkey is cooked through, in the same skillet, add the minced garlic and green onions. Cook for 2-3 minutes, or until the onion is translucent and the garlic is fragrant. Add the diced zucchini and coco aminos and continue to cook for another 3-4 minutes, or until the zucchini are tender.

Season with salt and pepper to taste. Cook for another 1-2 minutes, or until everything is heated through.

Serve the ground turkey and zucchini stir-fry hot, garnished with whatever toppings you want! You can enjoy it as is or serve it over rice or quinoa for a more filling meal. We love this recipe over sticky rice topped with sriracha…it’s so tasty!

Ground Turkey and Zucchini Skillet

Ground Turkey, zucchini, garlic and onion sauteed with coco-aminos and sesame oil

Ingredients

  • 1 Pound ground turkey
  • 2 Cups Zucchini
  • 1 tsp salt
  • 2 Tablespoons sesame oil
  • 2 Green Onions
  • 3 cloves Garlic minced
  • 2 Tablespoons Coco-aminos
  • extra sesame oil for finishing

Toppings (optional)

  • More Sliced Green Onion For garnish
  • Toasted Sesame Seeds
  • Sriacha Sauce
  • French fried onions or crispy shallots
  • chilli crisp

Instructions

  • Dice zucchini into about 1/4" cubes and toss in a bowl with a teaspoon of salt. This will allow the salt will draw some of the water out of the zucchini.
  • Dice onion. Set aside.
  • Heat a skillet over medium heat and add the sesame oil.
  • Add the ground turkey to the skillet, and break it apart with a spatula while it's cooking. After about 3-4 minutes add the garlic and green onion and continue cooking until the turkey is no longer pink.
  • Drain any liquid that has collected at the bottom of the bowl with the zucchini and discard. Add the cubed zucchini to the skillet. Add the coco-aminos now as well.
  • Cook for about 4 minutes until the zucchini is just a little soft but still holds it's structure. Taste for salt and pepper and add as needed.
  • Turn off the heat and add one more drizzle around the pan of sesame oil to finish the dish.
  • Serve over rice with any toppings you would like.
