Gold Potatoes With Bacon in a Cast Iron Skillet
Gold potatoes with bacon all in one delicious and savory dish. Have it for breakfast with an egg and cheese, or for dinner as a side dish.
Is it breakfast? Is it a side dish? Some recipes can’t get caught up in labels and categories, they’re just delicious and that’s all there is to it! We often serve this as a side when we are serving brunch to guests, or as a base for breakfast bowls in our house.
You could also serve it as a side dish with chicken or steak.

Why Gold Potatoes Are Better?
All kinds of potatoes are delicious of course, but for this dish, Gold Potatoes are better. They have a creamier texture and pair so well with the bacon. The skin is thin so you don’t have to peel them and they also hold up really well when reheated, which makes this a great dish to send to a friend’s house with a breakfast casserole or to have for brunch guests.
Real Bacon vs. Fake Bacon
If you don’t have the time to cook up real bacon, there is an alternative. Pre-crumbled bacon bits can come in handy! But beware, all bacon bits are not equal. Don’t get salad toppers or anything crunchy BUT if they are REAL bacon, it will work. My favorite is the Kirkland Signature Bacon Crumbles from Costco. They are 100% real bacon, and they work. Just add them to the hot pan for a minute or two to crisp them up, remove them, and add a little extra oil before adding the onion.
You can of course also use the real stuff. Just dice it and cook it for a few minutes in the pan until it gets crispy. Remove the bacon pieces from the pan, but keep the bacon fat. It will make those potatoes taste delicious!

Gold Potatoes With Bacon and Onions in a Cast Iron Skillet
Ingredients
- 3-4 Large Gold Potatoes
- 1-2 Tablespoons Worchester Sauce
- 2-3 Slices Bacon
- 1/2 Large Onion diced
- 1 Tablespoon Butter
- 1 teaspoon Garlic Powder
- 1 teaspoon allpurpose seasoning I use KINDERS BUTTERY STEAKHOUSE SEASONING or TRADER JOES 21 SALUTE SEASONING
- Salt and Pepper To Taste
Instructions
- Dice the potatoes into 1/2” pieces and put them in a microwave safe bowl.
- Toss with 1-2 tbs of Worchestere sauce.
- Cover the potatoes with a wet paper towel and microwave them for 3-5 minutes until theyare soft but still a little crisp.
- While the potatoes are cooking, heat a large skillet over medium heat. Add the diced bacon and cook until just crispy.
- Remove the bacon from the pan and add the onion to the bacon fat. Cook until the onion is softened.
- Add all of the ingredients into the pan including the potatoes and cook until the potatoes are soft and starting to get brown. Add salt and pepper to taste.
