Winter is hereeeee and our weeknights are filled again. Sports, lessons, meetings, and hopefully a meal together in there somewhere! We really try to eat together as a family as much as we can during these busy times but it can be hard. Sometimes just trying to think of what to make for dinner feels like too much. This is one of my SOS recipes when time is short and I’m not feeling very creative.
What food says weeknight dinner more than boneless, skinless, chicken breast? This parmesan chicken is a little more interesting than plain baked or grilled chicken. It’s packed with cheesy, salty, parmesan flavor and a signature crunch from panko bread crumbs. It’s easy, it’s delicious, it’s fast, and it’s healthy. PLUS this is a little more elevated compared to your other average panko chicken recipes.
To serve, throw an easy veggie side dish on the plate (roasted lemon broccoli anyone?), maybe some mashed sweet potatoes, and everyone at your table will thank you!
The Best Crispy Oven-Baked Parmesan Panko Chicken
Ingredients
- Boneless skinless chicken breasts
- Panko bread crumbs
- Grated Parmesan cheese
- Shredded Mozzarella Cheese
- Olive oil
- Salt and pepper
- Italian Seasoning
How to make the best Parmesan Panko Chicken
Instructions
- Preheat your oven to 350 degrees F. Pull out a baking sheet and two shallow dishes or bowls.
- In one of the shallow bowls mix the cheeses, spices, and breadcrumbs.
- Pour the olive oil into the other dish.
- Salt and pepper each piece of chicken to taste but remember they will be coated with the cheese mixture which has salt in it too.
- Dip each piece of chicken into the olive oil and then into the breadcrumb mixture, ensuring that they get fully coated. Then place each one on the baking sheet.
- Bake uncovered for 40-45 minutes until the chicken is cooked through and the breadcrumbs are golden and crispy.
- Serve immediately with your favorite side dish. I have a few suggestions below!
